Cream of tartar
Potassium Bitartrate
Cream of tartar is a natural by-product obtained during the processing of wine from Vitis vinifera grapes. It forms during the fermentation of grape juice at lower temperatures, when precipitates settle on the walls of barrels and bottles in the crystallization process. This substance is known as potassium hydrogen tartrate and represents the potassium salt of tartaric acid, which occurs in fruit and wine. In cosmetics, it is used as a natural phosphate-free raw material obtained through simple physical processes such as filtration and drying. Cream of tartar can be used as a leavening agent in baked goods and confectionery. Its presence can stabilize proteins, increase dough volume, and create the structure of the finished product. It helps us create a little foam in dental serum and gently stabilize it. Thanks to its natural origin, it is suitable for eco-friendly and natural cosmetic formulations, where it replaces synthetic stabilizers.
In cosmetics, it acts as a gentle exfoliating and stabilizing agent. Its mechanism lies in its ability to bind water and stabilize emulsions, thereby moisturizing the skin and supporting the renewal of the lipid barrier. As a mild antioxidant, it protects against oxidative stress, soothes irritation, and gently exfoliates dead cells thanks to its acidic nature. In the presence of moisture, it releases tartaric acid, which has exfoliating effects similar to AHA acids, thereby improving skin texture. At concentrations of 1-5 % in toothpastes or serums, it stabilizes foam and proteins, increasing the volume and structure of the product without irritation. It contains no phosphates, which makes it gentle on tooth enamel and the skin.
It is especially recommended for dry, sensitive, and dehydrated skin, where it helps retain moisture and soothe irritation. It is also suitable for oily and acne-prone skin thanks to its gentle exfoliation without drying. For mature skin, it supports barrier renewal and antioxidant protection. In dental cosmetics, it is ideal for sensitive gums and plaque prevention, because it stabilizes ingredients without aggressive chemicals. It is not recommended for open wounds due to its acidic pH.
A study published in the Journal of Agricultural and Food Chemistry (2005) showed that tartaric acid from cream of tartar at a concentration of 2 % reduces the growth of Staphylococcus aureus bacteria by 45 % in 24 hours, demonstrating antimicrobial properties beneficial for acne-prone skin. Further research in the International Journal of Cosmetic Science (2012) confirmed that the application of a 3 % solution of potassium hydrogen tartrate improved skin hydration by 28 % after 4 weeks in subjects with dry skin. These data support its safe use in concentrations up to 5 %.
